When it comes to lifestyle gurus, few match up to NASCAR driver Danica Patrick. She’s great at yoga. She gardens. And, as we watch on her Instagram account every day, she eats really well. Here’s just a few mouth-watering options we spotted lately:
1. Delicata squash
On Ricky's favorite plate….is a pretty normal dinner — meat, greens, and potato or squash. But this kind of squash called delicata has been a hit! You can probably use acorn, it's just more firm than this one. I cheated and microwaved 2 of them for about 7 min and got the meat of it out……and, the part that makes it amazing — add a little ghee which is clarified butter (butter without the dairy part) or regular butter if that's what you have and maple syrup! Goes good as a side for dinner or with eggs in the morning!!! Oh ghee goes really well with the greens too. I do that in the morning as well!!!!! ??
2. Bunless burger stack
3. All of the vegetables
4. Acorn squash with a drizzle of maple syrup, ground bison, spinach sautéed in ghee, diced apple and avocad
5. Spinach, sweet potato, ground turkey, avocado.
6. Sautéed spinach, filet, and butternut squash.
Got my butt up early to do a 30 min interval session before we fly out to Knoxville Iowa….and this was my pre workout snack. I can't help but make my food look pretty even if it's by myself at 630 in the morning! And yes that's a snack, I eat. A lot. ? after my workout I had sautéed spinach, filet, and butternut squash. Also a little chia pudding (made with homemade almond milk, makes it so much more thick and creamy) topped with figs and cinnamon. I think after I finished I said "soooo good!" Off we go to honor Bryan and hug his friend and family.
7. Pecans, coconut and chocolate drizzle
8. Chicken fingers (breaded and baked), honey mustard (homemade), French fries (sweet potatoes roasted)
9. Chocolate chip pizza?
I saw a recipe for magic bars and though good idea ? — the I realized I kinda made that (up) a few weeks ago! I was calling it a chocolate chip pizza, because I did it in a round pan (not many options in a bus), but it's more like a magic bar! Well, a paleo one. . Base- Almond flour, coconut butter Creamy filling- Dates, cashew butter, honey Topping- Chocolate chips, coco nibs . Something like that…… I wrote the it all down back when I did it. Right now I am going off memory while sitting in the front of the race hauler waiting for the track to dry, or they call it…….clearly I am bored. I don't normally write this much! #cookbookideas ?
