Vegan recipe video: How to make vegan nachos

We bet nachos were one of the things you assumed you couldn’t eat on a vegan diet, but we’ve found a way to make it work.

Lose the cheese and sour cream and replace them with tasty, healthy, plant-based alternatives to make this delicious vegan snack – ideal for a cosy night in with a film.
Here’s how to make vegan nachos for two.
Ingredients

75g vegan tortilla chips
1/2 portion guacamole
Jalapeños, to taste
Handful of fresh coriander, chopped

How to make vegan nachos
For the black beans
1 tsp olive oil
1/2 onion, chopped
1 clove of garlic
1/4 tsp chilli powder
1/2 tsp ground cumin
1/2 tsp ground coriander
200g black beans
For the salsa
3 ripe tomatoes
1/2 onion
Juice of one lime
Pinch of salt and chilli flakes
A small handful of fresh coriander

Method

First make the black beans. Fry the onion in a little olive oil. When soft add the garlic and spices, then stir in the beans, warm through and partially mash.
To make the salsa, finely chop the tomatoes and onions and place in a bowl with the lime juice, salt, chilli flakes and fresh coriander.

Place the tortilla chips in a bowl. Cover with a layer of guacamole, then the beans, the salsa, the jalapeños and freshly chopped coriander.
